Enough!!

Hi, all!! The last couple of weeks have been
nerve-wracking...hurricanes...floods...possible tornados. That went to
high winds...flooding...downed power lines...blown transformers. Then
it was living with no running water...living with no
electricity...packing water to drink...packing water to flush the
toilet. Now electricity has been restored to most places...running
water has been restored. However...you are not supposed to drink the
water until the well has been tested (if you have a well)...too much
standing water for too long...coming from who knows where...brought in
by Hurricane Irma, Hurricane Jose, etc. No one knows if anything seeped
into the ground water....or what that "anything" might be (bacteria,
etc).
Most people have family or friends in these areas. It's been hard to
"sit tight" and watch/wait. Tensions have ran highly. The Commissioner
from a Houston, Texas suburb..who called the Red Cross the "Red Lost"
(because they did not show up to help nor did he say he called the Red
Cross)...probably has listened to his citizens speak/cry/rant about all
I've mentioned in the above paragraph. With this in mind...I submit the
following comfort thoughts/comfort food.

Bacon, Cheeseburger, Tater Tot Casserole
1 1/2 # ground beef..1 (3 oz) package of real bacon bits...2 cups of
shredded cheddar cheese...1 (32 oz) package of tater tots...1 (10.75
oz) can of condensed cheddar cheese soup...2 cups of sour
cream...Bread-n-Butter Pickles for garnish
1)Preheat oven to 350 degrees. Grease a 9x13" baking pan with spray.
2)Brown ground beef in a large pan and drain.
3)Mix browned ground beef, bacon, cheese, tater tots, cheddar cheese
soup, and sour cream in a large bowl until well combined. Evenly spread
the mixture in a baking dish and bake 45-50 minutes or until bubbly.
4)Serve immediately with pickles.
Remember the kiddies and our service people. Take good care of the
furry and feathered ones out there. Be safe and healthy. See ya next
