Mind, Body, Soul
30/30 and the Heat
By Mona Lease

Greetings, Gals!! With the weather so hot, remember: If you are dieting and your scales do not show it - it's ok. You've lost weight. However, in the hot, muggy weather, your body will hold on to all of the water it can to keep itself hydrated and protected. Now is a good time to up your water intake and nix the sugary drinks. If you go for walks for exercise - try to do it early in the morning when it's cooler. If you aren't doing a lot of "hardcore" exercises or baling hay in the sun - cut out some of the salt intake. Keep reaching...Keep stretching!!

30 easy meals ready in under 30 minutes - Marian Carey
Teriyaki Steak and Asparagus: Flash fry the meat on a seriously hot grill for a lovely char and leave it rare in the middle. Allow to rest for 5 minutes so the juices soak back into the meat. Prepare the asparagus during this time.

Huevos Rancheros: These are toasted torillas topped with refried beans, egg, and spicy tomatoes. Add avocado, sour cream, and grated cheese. Tuck in burrito-style or eat with a fork.

Prawn, Chorizo, and Basil Linguini: Toss cooked prawns, chorizo, and basil into cooked linguini. Add sauce of your choice.

Cheese, Ham, and Fig Crepes: Goat's cheese, melted comte, salty sweet ham, and crunchy sour comichons (pickles) are added to the batter to toast the crepe. Make your batter beforehand or buy buckwheat crepes. Assemble and toast in the oven for 5 minutes.

Rigatoni with Amatriciana: It's an easy, speedy tomato and salty pancetta and chili pasta. Add cooked pasta to the sauce. Rigatoni tubes suck up the sauce for sauce in every bite.

Rib of Beef with Peppercorn Sauce: Ribeye is the most flavorful cut of meat. Top meat with peppercorn sauce. Serve with fries, broccoli, or pickled shallots.

Chicken Caesar Salad: Avoid messing with egg yolks by using an anchovy, cream fraiche. Worchestershire sauce, and mayo dressing.

Mussels Rasa: Salty, meaty mussels go great with a creamy, spicy, and zesty sauce. Make sure mussels are seriously fresh.

Cheeseburgers: Grill burgers and add cheese while burger is still on the heat. Transfer to bun and add toppings/condiments.

Grilled King Prawns with Chermoula: Chermoula is a north African sauce of cilantro, parsley, garlic, preserved lemon, and spices (salt, etc)...available in supermarkets. Prawns take 5 minutes to grill and are served with rice and carmelized lemon halves.

Loaded Jacket Potato: Microwave potato and finish under the grill for a crisp shell and to save time. Load with butter, grated cheese, chili, etc.

Macaroni Cheese with Grilled Tomatoes: Gruyere, emmental, and pancetta make it extra cheesy. Grill tomatoes and add cheese.

Lamb and Cherizo Burger: Shape ground lamb shoulder and chorizo into patties. Grill 10 minutes. Add garlic, mayo, and spicy, minty apricot salsa before putting it into a bun.

Apple and Turkey Quesadilla: Use ready-cooked and marinated turkey or chicken. You can use store-bought guacamole to save time.

Spiced Beef Skewers: Use spiced, cubed, beef and add red onion, sumac, and parsley. Cook over grill to desired tenderness.

Yakisoba: Japanese noodle dish...a stir-fry of buckwheat noodles, pork, and cabbage...with fried egg on the top.

Thai Spiced Fish Cakes: Whitefish, breadcrumbs, and curry paste are shaped into little balls and fried. They are then served with a salad of zucchini, cilantro, mango, chili, lime, and carrot.

Falafel Sandwich: The crunch and nuttiness of falafels are paired with creamy tahini, herby salad, chili sauce, and tangy pickles in a pitta. (Middle eastern inspired).

Quick Lamb Stew: Lamb is cooked quickly and served rare in stock with poached carrots, leeks, and scallions.

Chickpea Burger: Spicy burger patties are cooked, topped with purple cabbage slaw and served in a toasted sesame seed bun.

Chinese Crispy Pork: Pork is cooked twice and melts in your mouth. Sugar snap peas and baby carrots stay crisp. Serve with jasmine rice to soak up all the sweet and salty sauce.

Prawn Tacos: Grill prawns in under 5 minutes. Add spicy strawberry and avocado salsa. Fill taco shell and enjoy.

Grilled Vegetable Salad: Grill avocado and carrots. Toast tomatoes to soften and sweeten. Toss with wild rice. Drizzle over creamy tahini dressing.

Crab Spaghetti: The sauce is a little garlic, chili, parsley, and a squeeze of lemon to accent the crab meat. Use any pasta.

Potato, Zucchini, and Goat's Cheese Frittata: Cook veggies and add goat's cheese. Eat hot with crusty bread.

Fish Finger Tacos: Cook fish fingers and serve with watermelon salsa and avocado cream. (Use frozen fish fingers to save time).

Haddock and Cheese Sauce: Poach haddock in cheese sauce. Serve with cooked new potatos and fresh garden veggies.

Sausages and Cannelli Mash: Swap potato for the cannelli to save time. Lemon zest and mustard compliment the cooked sausage. Add tomato gravy on top if you like.

Crague Madame: A creamy garlic spinach balances the meal of good quality ham or smoked salmon. Fried egg adds protein. A little Dijon mustard adds to the flavor as well.

Teriyaki Chicken: Teriyaki chicken is served with rice and a sprinkling of scallions.

The best is yet to be!!
